Cocoa Crusted Almonds

Lets just get down to business . . . here is a super easy way to fancy up your nuts!

            Cocoa Crusted Almonds

 

Ingredients:

1lb raw almonds

3/4 cup sugar + 2 Tbsp

3/4 cup cocoa powder

1 tbsp salt

1 tsp vanilla extract (optional)

 

Procedure:

-Dissolve 3/4 cup sugar in 3/4 cup of water and bring to a low boil for about 5min or until mixture reduces down by half. Add vanilla extract if desired.

 

-In a separate bowl, whisk cocoa powder, sugar, salt

 

- Pour almonds into reduced sugar/water mixture and stir until coated.

- With a slotted spoon, place almonds in dry mixture and be sure to drain any excess sugar mixture.

 

- Toss drained almonds in cocoa mixture until well coated. 

 

- Sift excess cocoa powder out and lay almonds onto a sheet pan with enough room.

- Bake for about 7-10 min while turning and shaking the tray at 3 minute intervals.  Remember the almonds will still continue to cook and crisp even after coming out of the oven so don’t bake too long!  I take mine out as soon as I smell them.

 

- Cool and Enjoy!
