Wilting Greens
Unlike last Tuesday, my kitchen really wasn’t hopping with creations. I didn’t feel like cooking at all really but I wanted to make sure I had some things to bring to school today. I had another piece of cornbread for breakfast after some coffee. I’m sure you know what it looks like by now.
I will show you an odd combination that I came up with.
This right here is some rice pasta, kale, chicken mixed with some masala simmer sauce and topped with some cheese. I had some sauce leftover after making the chicken and not having enough left over to make my usual vegetable dish. But what really is important is the kale. I often buy HUGE bunches and use them for raw kale salads and kale crisp experiments in the dehydrator but there comes a time where it starts to look weird and begins to smell like an unchanged diaper. In other words . . . its starting to turn.
Whenever this happens I use a simple solution to make sure Im not throwing it in the trash. I will take some hot pasta, rice or beans with a warm sauce and add it right on top and stir to gently wilt. This adds amazing nutrition to any dish and also minimizes waste. What I like is that you can also do this with spinach, collards, chard, cabbage etc. I wouldn’t recommend doing this with lettuce as its to watery and cant really withstand heat.
In other news. I finally got a phone! If you know me personally, you would know that my sad phone that I have had since 2006 started to channel aliens regularly (aka screen went wacky). I debated back and fourth whether to switch providers because Verizon is so expensive. We ended up both going on the same plan which will end up saving us each $20 per month.
I know its not a smart phone or anything cool like that, but I already have an iPad and pay $25 per month on a data plan, so there is no need to have ANOTHER electronic burning a hole in my wallet. It’ll do just fine.
I’m actually in the city early today to make cookies for the open house tonight at NGI. I remember eating them when I went to the open house which solidified my decision to enroll there, so its cool to see things come full circle!
After, we have our first improv class. I love creating meals out of things I have as you can see above so this should be fun!
Do you spend too much on your cell phone plan? What do you do with food that’s about to go bad? Toss or create?





If it smells or has changed color or texture, I chuck it. No questions asked.
Do you have those little apple things? You buy them at whole foods and they supposedly help keep the produce fresher, longer.
Oh believe me, I do too. In this bunch there was one slimy leaf that was stinking up the whole bunch!
And no I havent invested in those bags. I keep hearing that they are a waste of money.

What I am talking about isn’t a bag. It is a little blue apple.
But, we have used the green bags, too and they are not a waste of money in my experience. I think how good they are depends on the quality of produce you are buying.
My husband got me the iPhone 4 for Valentine’s Day, despite months of protesting that I didn’t want one because it’s too expensive, but I love it! I love having the internet wherever I go and having an ipod in my phone.
When food goes bad on me, sometimes I’ll use it up really quickly and sometimes I just toss it if I can’t think of anything. I currently have a jar of homemade almond milk and some chia pudding in my fridge that need to go. Now that I’m getting better at intuitive eating and between the heat and my body wanting to release some weight, my appetite is really wonky and I’ve given myself permission to toss things instead of eating them just for the sake of conservation. I won’t use my body as a garbage can. I’m trying to get better at grocery shopping as means of waste control.
Just found your blog when searching how to wilt some chard. I was wondering what brand masala simmer sauce you use or do you make your own?

I’m working on making my own masala sauce but for right now I just use the one from Trader Joes.
