Its official, I stayed in my pajamas ALL DAY!  Those kinds of days are few and far between, so it was a real treat.

But, just because I stayed in my pajamas doesn’t automatically mean I was lazy . . .

I have been thinking a lot about my blog lately and it really hasn’t been what I want it to be.  I know I am busy but  I really think that what I am doing with my life is pretty cool and I want to share it in the best way possible.  When I looked at the aesthetics of Balancing Val I thought about how I would feel if I was a new reader and what I would do.  I found the layout to be very boring and bland . . . Yes, content is king but lets face it, in the blog world people judge a book by its cover.

So I spent a good chunk of time today creating a theme that better suits me with our new computer.  Its not perfect and there are many more changes to come, but I feel much better about my blog than I have for months.

Since Chris and I were both busy, we really didn’t eat any solid meals.  So I decided to get in the kitchen and see what we had.


. . . . uh NOTHING

Nothing except for bacon and potatoes that is.

That’ll work, you know how much I love potatoes.



Cube up some potatoes so they are relatively the same size.


Slightly cook your bacon.  I used this handy microwave rack with a bowl under it. This enabled me to collect the bacon fat to be used later in the recipe. Alternately, you could do this in a frying pan or in the oven, but make sure your bacon is not cooked all the way.  The bacon will be cooked again in the oven so you don’t want burnage.


Chop up your bacon into bite sized pieces and mix them and the bacon grease you collect in with the potatoes.  Make sure you coat every piece (use your hands sucka! High five) Season with some salt and pepper if desired.  Just make sure you don’t use too much salt as the bacon will lend its salt through the dish.


Stick in a preheated 375 degree oven for 40-60min or until potatoes are cooked through.  Every 20 minutes you should mix them around so they brown evenly.


Perfect by itself or drizzled with some balsamic vinegar.


I paired this with a nice green salad topped with baked tofu for our dinner tonight.


Oh, and I made good use of our Christmas gift from yesterday . . .

Have your boyfriend burn cook breakfast.

. . . Not to worry, there were some good bites in there. Like the ones with Hershey kiss in them 😉

And sit home and watch the powder pile up . . .

But . . . As of right now . . . Christmas later at the Dimino house is NOT canceled.

There is lots of organizing, cleaning and cookie baking to do before we go!
