Missing The Sun

I really haven’t been in much of a blogging mood lately. I am taking the pictures and drafting the posts but they never seem to make it up here.  It really is much more work than I thought it would be.

I go through my phases though where I need a few days off here and there to catch up on other life things.  I do have a lot of things in the works that will make it up sooner or later!

Last night I went to bed with every intention of having a savory breakfast but when I woke up, I was definitely craving something sweet.  I whipped together a large pancake.

I threw together some WW pastry flour, baking soda, sugar, salt, egg a huge pile of wild blueberries and a small handful of chocolate chips.  This was much more sweet than I was expecting so I decided to forego my coffee this morning.  I’m working on that whole balance thing, ya know?

I spent the next few hours cleaning, packing and putting away laundry.  The weather is forecasting a very wet weekend where we are staying which I am kind of bummed about as a lot of our plans were outdoors.  I know we’ll make the best of it if it does rain, but it still kind of puts a damper on things.

As I was getting ready, I decided to use my homemade all natural body scrub.  Its been a while since I exfoliated but I am glad I did as I am super smooooooth . . . .

For lunch I had a piece of leftover spinach pie (a TJ’s frozen item).  We ate it for dinner last night which I topped with a poached egg.

Unfortunately, I was impatient today and had a poached egg fail.  I didn’t wait until the water got hot enough which made a swirly mess.  At least I know how to make egg drop soup!

 

Now, it is almost time to head into the city for school.  It looks like we got a couple of low key classes going on today but I could be way wrong.  Even though it is dreary, windy and rainy . . . I also want to stop at a few stores to see if I can get a nice shirt for the weekend.  I am so sick of wearing the same clothes!!

Salad: romaine, pepper, mushroom, carrot, onion, 1/2 veggie burger, arame (sea vegetable), herbed goat cheese, olive oil)

Snack: dates, sweet & salty nut mix

 

I’m feeling like that’s not going to be enough food for the day!! We’ll see . . .

What are your best tips for getting out of a blogger slump?

Lazy Girl’s Trail Mix

Chris and I are trying to make sure we eat better in 2011.  Our schedules are so backwards that we only get to eat together twice a week so we usually just fend for ourselves.  Were coming up with plans to make things for ourselves so we always have them available rather than going out to eat.

 

When we thought about snacks, I suggested a healthy trail mix that we make ourselves.  It couldn’t be that hard right? 

 

Making it ourselves would allow us to control the ingredients and save us some money.

 

Here is what I used . . .

  • One box Kashi GOLEAN Crunch! in Honey Almond Flax
  • 1/2 container dried cranberry’s
  • 1/2 bag dark chocolate chips.

Um, yeah so all you do is mix them together in a large bag until everything is evenly distributed and eat as you please!
